Goat Nyama Choma is one of Kenya’s most beloved grilled meat dishes, especially popular in coastal cities like Mombasa and across the country. Goat meat — often chosen for its rich flavor and tenderness — is seasoned lightly and roasted slowly to achieve a smoky, succulent texture that pairs perfectly with Kenyan staples such as ugali and kachumbari.
Below are two ways to prepare this classic on a gas cooker — a quick everyday version for fuss-free meals and a dinner style for special occasions.
1. Simplified Goat Nyama Choma (Everyday Version)
Ingredients (Serves 4)
- 1 kg goat meat (bone-in)
- 2 tsp salt
- 1 tsp black pepper
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1–2 tablespoons cooking oil (vegetable oil or sunflower oil)
Instructions
- Rinse goat meat and pat dry.
- In a bowl, mix salt, black pepper, lemon juice, and minced garlic. Coat the meat thoroughly.
- Heat a large heavy pan with oil on medium heat on your gas cooker.
- Place goat pieces, skin side down first. Cook 20–25 minutes, turning occasionally so they brown evenly.
- Reduce heat, cover, and cook another 25–30 minutes until meat is tender.
Serve with: Kachumbari or fresh salad.
Prep + Cook Time: ~1 hr 15 min
2. Dinner-Style Goat Nyama Choma (With Kenyan Sides)
Ingredients (Serves 6)
- 1.5 kg goat meat (preferably shoulder cuts)
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1 large onion, sliced
- 2 tsp paprika
- 1 tsp curry powder
- 1 tsp ground cumin
- 1 tsp freshly ground black pepper
- 1 tsp salt
- 3 tomatoes, diced
- Optional: 1 green chilli, sliced
Instructions
- Combine olive oil, lemon juice, paprika, curry powder, cumin, salt, and pepper. Mix into goat meat. Set to marinate 30–60 minutes.
- Heat pan on gas cooker on medium. Add onion rings and lightly sauté.
- Add marinated goat pieces and brown on all sides (~30 minutes).
- Add diced tomatoes, lower heat, cover, and simmer 45–60 minutes until meat is tender and sauce reduces.
Serve with:
• Ugali (maize meal)
• Kachumbari (tomato-onion salad)
• Optional: roasted bananas or sautéed sukuma wiki
Prep + Cook Time: ~2 hrs
Kenyan Pairings
• Ugali: Traditional maize meal that soaks up rich meat juices.
• Kachumbari: Fresh tomato and onion salad that brightens rich meat flavor.
• Sukuma Wiki: Light sautéed greens complement the hearty goat.
Tips for Best Flavor
- Goat meat benefits from slow cooking to tenderize.
- Adjust spices based on local taste; more chilli adds coastal heat.
