1. Simplified Chicken Kuku wa Kupaka (Everyday Version)

Ingredients (Serves 4)
- 1 kg chicken pieces (thighs & drumsticks)
- 1 tbsp oil
- 1 onion, sliced
- 1 tsp turmeric
- 1 tsp curry powder
- 1 can (400ml) coconut milk
- 1 tsp salt
- Optional: chilli flakes
Instructions
- Heat oil on medium gas flame. Add onions, sauté until soft.
- Add turmeric, curry powder, and chicken pieces — brown lightly.
- Pour in coconut milk, add salt and optional chilli. Cover and simmer 30–35 min until chicken is cooked and sauce thickens.
Serve with: Steamed rice or chapati.

2. Dinner-Style Chicken Kuku wa Kupaka (With Kenyan Sides)
Ingredients (Serves 6)
- 1.5 kg chicken (mix of thighs, breasts, legs)
- 2 tbsp cooking oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1″ ginger, grated
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp coriander
- 2 tomatoes, diced
- 1 can (400ml) coconut milk
- 1 tsp salt
- Fresh coriander for garnish
Instructions
- Heat oil in a wide pot on your gas cooker. Add onions, garlic, ginger; sauté 3–4 min.
- Add curry powder, cumin, coriander — stir until fragrant.
- Brown chicken in spice mixture.
- Add tomatoes, coconut milk, and salt. Lower heat; cover and simmer 40–45 min until sauce thickens and chicken is tender.
Serve with:
• Pilau rice or plain rice
• Kachumbari
